Observation (CORRECTED DURING INSPECTION): Walk-in cooler: All foods that were at 14C to 16C (fish, ground meat, pork hocks, eggs, red meats). Air temperature at 15C. All foods in wallk-in cooler were discarded.
Room temperature: chopped onions, chopped garlic were sitting since morning. Staff mentioned that cold water is added underneath of the containers (in a bigger container) to keep it cold. Discussed that he should use ice instead of water to keep foods cold (4C or below). Foods noted were 27C and were discarded since it was sitting at room temperature for >2 hours.

Observation (CORRECTED DURING INSPECTION): Handwashing stations in the kitchen and back prep area did not have paper towels in the dispensers. Staff mentioned that the paper towels were ordered yesterday and hasn't arrived. Temporary paper towels that did not fit in the dispensers were provided.

Observation (CORRECTED DURING INSPECTION): Large block of frozen squid thawing in standing water at 15C. Discussed proper thawing method is at 4C or below. Staff drained out the water and add new cold water in (add ice to keep water cold). Keep the cold water running.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The following items is in disrepair:
1. Foods in walk-in cooler at >4C (fish, ground meat, pork hocks, eggs at 14C to 18C). Air temperature at 15C.
2. Standing glass door cooler in front of cooking appliances at 4C.
3. All three freezers had a lot of frost build-up.
Corrective Action(s): Repair the items listed above.1
1. and 2. Temperature of walk-in cooler must be at 4C or below for both coolers.
3. Move all frozen foods to other freezers to keep food frozen and defrost one freezer at a time to remove frost.
Correction date: immediately.
