Observation (CORRECTED DURING INSPECTION): Various food stored in the walk-in cooler measured with an internal food product temperature around 8.5C. Ambient air temperature for the walk-in cooler measured at 9C.
Corrective Action(s): The following food items were discarded: 4 trays of curries, 2 trays of cooked rice (appoximately 4L per tray). Transfer other potentially hazardous food into the prep coolers and beer cooler. DO NOT store any potentially hazardous food item in the walk-in cooler until it is able to maintain an air temperature of 4C or less.

Observation: Mildew observed on the inside of the ice machine.

Corrective Action(s): Staffs were instructed to prepare 200 ppm bleach sanitizer in pails with wiping clothes stored inside. Clean and sanitize all food contact surfaces. Hard surface sanitizer must be available at all times during operation.
