Observation (CORRECTED DURING INSPECTION): Tapioca pearls stored inside the warmer at 30C. Tapioca pearls are potentially hazardous and must not be stored at the temperature danger zone (4C - 60C).
Corrective Action(s): Move the tapioca pearls into a functional cooler to maintain at 4C or less.

Observation: 1. Mildew observed on the water tray inside the ice machine.
2. Dried food debris observed on the mixer.
3. Five knives stored in the gap of the metal grid stored on top of the 3 compartment sink.
Corrective Action(s): Clean and sanitize the aforementioned equipment and utensils. Obtain a proper food grade knife rack for storing knives. Correct by: today.

Observation (CORRECTED DURING INSPECTION): Stacks of cardboard boxes stored in front of the back kitchen hand washsing station.
Corrective Action(s): Remove cardboard boxes in front of the hand washing station. Hand washing station must be obstructed at all times.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Operator did not use any liquid hand soap while washing his hands after handling raw meat.
Corrective Action(s): Hands must be washed with warm water, liquid hand soap for at least 20 seconds then dried with single use paper towels.
