Observation (CORRECTED DURING INSPECTION): One kitchen cooler was half-plugged into the wall, resulting in a high temperature in the cooler (12 degrees Celsius). Cooler temperature went unoticed by staff, as staff are not recording temperatures of coolers/freezers daily. Cooler was plugged in and temperature quickly reduced to </= 4C. In the future: When temperature is greater than 4C for more than 2 hours, as a corrective action, all foods must be DISCARDED due to the possibility of pathogen growth.

Observation: No temperature records for coolers/freezers maintained.

Corrective Action(s): Print out a temperature record chart and have staff record temperatures of coolers/freezers at least 2x/daily. Ensure staff know of corrective action when cooler temperature is above 4C (e.g. close cooler doors, call repair technician, decrease temperature, half-fill containers to be used up in 2 hours, etc.)

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Multiple areas show an accumulation of food, debris, dust, etc. including:
- Underneath cooking equipment in kitchen
- Ventilation hood in kitchen
- Fronts of coolers/freezers and handles (fingerprints, debris markings, etc.)

Corrective Action(s): Clean these areas thoroughly.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Quats sanitizer dispenser appears to be dispensing a low amount of quats - checked with LaMotte test strip (inspector's) and Ecolab test strips (on-site). Dispenser may routinely lose calibration and must be checked by staff daily to ensure appropriate concentration.

Corrective Action(s): Increase the concentration at the quats sanitizer dispenser. It should be at 200 ppm to achieve sanitization of food contact surfaces.

General Comments
All handsinks equipped with soap and paper towel *Note: As per previous inspection, do not store water jugs beneath soap and paper towel dispenser in case of any cross-contamination from soapy or wet hands.
Ice machine free of mould and rust; scoop stored with handle not in ice
Glasswasher had 12.5 ppm iodine upon final rinse cycle; test kit available
Low-temperature dishwasher achieved 50 ppm chlorine upon final rinse cycle. *Note: Unit was not primed when it was first tested which meant that dishes were not being sanitized (0 ppm chlorine). Check chlorine concentration daily. Prime unit every time turn on if need be.
Fruit flies found. One UV light in bar area. *UV light in kitchen area not turned on / bulbs burnt out - Please address. As well, routinely bleach mop heads to prevent harborage (fruit flies love moisture).
All coolers at </=4C (exception: cooler in kitchen). Ensure that cooler lids are closed whenever possible to prevent cold air loss.
Freezers at </= -18C
Hot-holding at >/= 60C
