Observation (CORRECTED DURING INSPECTION): [REPEAT VIOLATION] QUATS sanitizer not prepared during time of inspection. Staff prepared sanitizer pails with wiping cloths during time of inspection. All food contact surfaces were cleaned and sanitized during inspection.
Corrective Action(s): Ensure QUATS sanitizer is prepared throughout the day and changed at least every two hours (or as per approved sanitation plan) to remove potential pathogens from food contact surfaces, equipment and utensils. Progressive enforcement actions may be taken if this violation is repeated.

Routine Inspection Conducted

Observations:

1. Temperatures:
- All coolers at or below 4'C
- All freezers at or below -18'C
- Hot-holding unit for pizza measured at 71'C

2. Sanitation:
- General sanitation of premise is satisfactory
- Hand washing stations supplied with hot and cold running water, liquid soap and paper towel
- Low temperature chemical dishwasher measured at 50 ppm chlorine residual with test strip
- 3-compartment sink available on site with drain plugs
- QUATS sanitizer dispenser at 3-compartment sink measured at 200 ppm QUATS concentration
- QUATS test strips available on site (exp. Jan 2023)
- No signs of pests during time of inspection

3. Storage:
- All food stored at least 6 inches off the floor and covered
- Chemicals are stored away from food

4. Administration:
- Operating permit visible at front entrance
