General Comments
> Handsinks near the pizza preparation area, near the 3-compartment sink and in the staff washroom were fully equipped with running hot and cold water, liquid hand soap, and paper towels.
> Sanitizer spray bottles measured 200 ppm (QUATS).
> Compartment sink was not in use during inspection. Warewashing procedures discussed with operator.
QUAT dispenser in the 3-compartment sink measured 200 ppm.
> Coolers
- Pizza prep cooler Food items measured 3 degrees C surface temperature.
- Under the counter coolers (UTCs) below pizza prep cooler measured 4 degrees C ambient air temperature and 1 degrees C food surface temperature.
- Condiments UTC cooler measured 2 degrees C
- Walk-in cooler measured 1 degrees C
- Beverage cooler measured 3 degrees C
- Temperature logs are maintained

> No signs of pest at time of inspection
- pest control company report was available. Last inspection was done on April 11th, 2023.
> General sanitation was satisfactory
> Vents over the oven had no grease accumulation
> Pizza cutters and other utensils were being cleaned and sanitized every 3-4 hours.
> Food organization on the dry storage area and walk-in-cooler were satisfactory.
