205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): 1. Cheese and deli meats inside sandwich cooler at approximately 8-9C at time of inspection.
2. A total of 15 (500 ml) containers of old-held chicken noodle soup, clam chowder, and vegetable cream soup all held in display cooler at an internal temperature of 15C. Employee states that they have been in the cooler for the entire day.
Corrective Action(s): 1. Cheese and deli meats inside the sandwich cooler were immediately placed into another cooler with an ambient temperature of 4C. Ensure that cheese, meats, and potentially hazardous foods are always stored at 4C or less.
2. Aforementioned items were discarded at time of inspection. Ensure that all potentially hazardous foods are held at 4C or less.

Proper temperature control is required to ensure that disease-causing bacteria do not grow and lead to foodborne illness.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Interior of ice machine had significant amounts of grime along inner lip and sides.
Corrective Action(s): Ice machine was emptied, cleaned, and sanitized prior to re-use. The ice machine must be cleaned and sanitized on a regular basis to prevent growth of mildew that could lead to contamination of ice.

Observation: 1. Sandwich prep cooler at 13C, even after 20 minutes of cooelr lids being closed. Cooler was already adjusted to the coolest setting
2. Front of display cooler varies from 10-15C.
Corrective Action(s): Adjust or repair the both coolers so that they maintain an ambient temperature of 4C or less. This is mandatory to ensure that potentially hazardous foods, such as meats, do not have growth of bacteria that could cause foodborne illness.

Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottle is not labelled. This is a repeat violation.
Corrective Action(s): Sanitizer spray bottle was labelled at time of inspection. ALL CHEMICALS must be appropriately labelled to prevent mis-use.

Comments

Routine inspection conducted. The following was observed:

1. Temperatures
- Sandwich cooler: 13C (see violation code 308 above)
- Display cooler: 15C (see violation code 308 above)
- Mini sandwich cooler: 4C
- Stand-up stainless steel cooler at 4C
- Stand-up freezer at -18C or less
- Hot-held food products at 60C. *REMINDER: Ensure that the water level reaches the bottom of the chafing dishes for adequate hot-holding*
- Hot-held food products were removed from hot-holding and cooled at time of inspection, to be sold as cold-held products in the display cooler the following day

2. Hygiene and Sanitizing
- Handwash station stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizer spray bottle contains 200 ppm quaternary ammonium compound (quats) - but is unlabelled (see violation code 309 above)
- 2-compartment sink at the back used for manual warewashing

3. Storage
- Products inside coolers covered with food-grade saran wrap. Reminder: Unless products have tight-fitting lids, they cannot be "stacked" on top of each other

4. Administrative
- Employee has FoodSafe 1
- Permit posted and up-to-date

Note: A follow-up inspection will be conducted to ensure that both coolers are fixed and in good working order. ***Do not place any potentially hazardous foods in the display cooler or the large sandwich cooler until a follow-up inspection has been done***
