Observation (CORRECTED DURING INSPECTION): Pineapple pieces (canned) and meat sauce from 2018 as shown on date stamp were stored in walk-in cooler. Pineapple had extensive mould growth .

Observation: Dishes were not sanitized properly due to broken dishwasher not dispensing 50 - 100ppm bleach. Plates during final rinse in dishwasher had no bleach tested at the surface.
Corrective Action(s); Use manual sanitizing method by soaking dishes in 45C water with 100ppm bleach or 200ppm QUATS solution for minimum 2 minutes. Do this for all dishes until the dishwasher is fixed.

Comments:
-Correction order was issued by district Health inspector due to broken dishwasher and extensive rodent droppings.
-Walk-in cooler: 1C. Prep cooler: 2.1C.
-All freezers were at -18C or lower.
-Foods were stored adequately with raw meats under ready-to-eat foods and dated.
-Glasswasher was dispensing Iodine with 17.5% or more.
-Equipment were stored above the floor in sanitary conditions.
-Handwash station in the kitchen has hot & cold running water, liquid handsoap and single-use paper towels.
-foodSafe Level 1 is valid and held by kitchen staff.
-Sanitizer spray bottle contained 200ppm bleach.
-QUATS at dispenser tested at 200ppm.
-Dry storage was adequate. All foods stored off the floor in containers with lids.
-Ice machine was in clean condition.
-Washroom was clean.
