206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Staff portioned rice into metal and plastic containers for storage in the hot holding unit. Rice ranged from 51C to 57C.
Corrective Action(s): Hot potentially hazardous foods must be stored at or above 60C to prevent the growth of pathogens and or the formation of toxins. Hot potentially hazardous foods must be greater than 60C prior to placing into a hot holding unit, otherwise foods will not be maintained at or above 60C. Rice was reheated to 74C at the time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Numerous equipment and utensils in the storage area were still covered in food. Scoop handles were also sticky with old grease. Person in charge stated items are cleaned and sanitized prior to each use.
Corrective Action(s): All equipment and utensils must be properly cleaned and sanitized after each use to prevent potential contamination of foods. Equipment and utensils were washed and sanitized at the time of inspection.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Lettuce was stored directly on top of a box of ground beef. Staff stated they were in a hurry and put lettuce on the ground beef
2) Box of chicken was stored on the floor in front of the handwash station. Staff stated the chicken just arrived and they were reviewing documents, rather than storing foods properly.
3) Bag of rice was stored on the floor.
Corrective Action(s): 1) Raw meats and ready-to-eat foods must be stored separately to prevent contamination of foods. Being in a hurry is no excuse for failing to adhere to food safety rules. Lettuce was moved at the time of inspection.
2) Foods must be stored off the floor to prevent contamination of foods. Once deliveries arrive, immediately store them in the designated areas and protected from potential contamination.
3) All foods are to be stored off the floor and protected from potential contamination.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation: Pails of bleach and spray bottle of degreaser was unlabelled. Person in charge stated all staff know the contents of the chemicals.
Corrective Action(s): All chemicals must be labelled to prevent accidental mixing or misuse of chemicals. All containers must be relabelled as needed. Staff being aware of the contents is not an excuse for leaving chemicals unlabelled.

Comments

- Prep cooler was at 2C.
-Glass door cooler was at 4C.
-Metal upright cooler was at 4C.
-Back cooler was at 4C.
-Cooler unit by the hot holding unit was at 4C.
-Chest freezers ranged from -18C to -23C.
-Chicken cooling procedure is as follows: cooked chicken is cooled at ambient temperature for approximately 1 hours, moved into the chest freezers for cool (until 20C), and moved into a cooler for cooling. Chicken made the previous night was at 4C.
-Cleaning and sanitizing carried out in 3-compartment sink. Bleach prepared and tested at 200ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer containers tested at 100ppm to 200ppm.
-General sanitation satisfactory.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
-Person in charge FOODSAFE Level 1 valid until January 12, 2024. However, neither staff member in the kitchen at the time of inspection appeared to display safe food handling practices.
