Observation (CORRECTED DURING INSPECTION): The following cold potentially hazardous food (PHF) product were stored in the prep insert cooler with internal temperatures greater than 4 deg C:
- Grilled chicken
- Grilled pork
- Raw beef slices
- Meatballs
- Tripe
- Meat tendon
Corrective Action(s): - Cold PHFs that had an internal temperature greater than 4 deg C and were stored in the cooler unit for greater than 2 hours were discarded (grilled chicken and grilled pork)
- Cold PHFs that had an internal temperature greater than 4 deg C and were stored in the cooler unit for less than 2 hours were moved to the working walk-in cooler unit that registered at or below 4 deg C (raw meat slices, meatballs, tripe, and meat tendons)
