* Clean the compressor areas of all coolers and freezer to remove dirt build-up ( By Jan. 25, 2019) * Ensure to keep all raw meats and poultry on the bottom shelves away from any vegetables and ready to eat foods. * Some ceiling tiles near the fume hood require cleaning. Upright coolers below 4 C. Upright freezer < -18 C. Prep cooler across from the grill < 4 C. Deep freezer < -18 C. Quats sanitizer at the dispenser and in third sink tested 200 ppm. Liquid soap and paper towels available at the hand sink. General sanitation is satisfactory.
