Observation (CORRECTED DURING INSPECTION): Cheese and chicken in the inserts >8C in the prep cooler. Staff stated both cheese and chicken were kept there more than 1.5 hours.
Corrective action: Discarded both cheese and chicken. Remind staff to put only small portion into inserts and place lids on right after each use, make sure cold food kept cold <4C.

Observation (CORRECTED DURING INSPECTION): Walk in cooler: Fried chicken wings chilled in trays, however, they were not properly protected from contamination.

Bar handwash sink was fully equipped with hand soap, paper towel and hot/cold running water.

Quat sanitizer 200ppm; Iodine at 12.5ppm at final cycle for glassware.
No pest activity observed.
General sanitation satisfactory.

Kitchen:
There was stringent smell from dishwasher and grease trap in the dry storage area. Recommend to check with grease trap cleaning company for service quality and frequency.
Walk in cooler temperature 2.4C. Walk in freezer -23C.
Ice machine was in a good sanitary condition. Ice scoop properly stored.
No hot holding food observed during inspection.
Low temperature dishwasher tested 100ppm chlorine by the end of rinse cycle.
Sanitizer at dispenser 200ppm.
Dry storage area, all food containers were 6" off floor.
No signs of pest activity during inspection.
