Observation (CORRECTED DURING INSPECTION): 0 ppm chlorine sanitizer was available in the spray bottle.
Corrective Action(s): 100 ppm chlorine sanitizer was setup in the spray bottle and the counter surfaces were re-sanitized. Ensure that the bleach water is changed in the spray bottle throughout the week to maintain 100 ppm chlorine sanitizer. Recommended: Obtain chlorine test strips to monitor the chlorine concentration in the spray bottle.

Upright glass cooler was at 3 degrees C (4 degrees C or less).
Under-the-counter cooler was at 3.7 degrees C (4 degrees C or less).
Refrigeration units were equipped with thermometers.
Hot-held sauce was >74 degrees C.
A probe thermometer was available on-site.
Dishwasher final rinse was 73.6 degrees C (71 degrees C or hotter) internally at the plate.
No signs of recent pest activity were observed at the time of inspection.
