Observation (CORRECTED DURING INSPECTION): Hot dog sausages were internally probed at 48.6C. Sausages were added approximately 1 hour ago.
Corrective Action(s): Sausages were reheated to 74.0C for 15C, then reduced back down to 60C. Do not turn the dial too low, or it may not hold at 60C. It is your responsibility to monitor the temperature inside. EHO reviewed proper hot-holding practices and corrective actions with operator at time of inspection.

Observation: None of the two employees on-site at time of inspection have FoodSafe 1 or its equivalent. 7-Eleven's in-house training program is not recognized by BCCDC as an equivalent to FoodSafe 1.
Corrective Action(s): For future shifts, please ensure that at least one employee on duty has FoodSafe 1. Employees from today were instructed to take FoodSafe 1 if the following applies:
- They will be the only employees on duty
- No other employee on duty has FoodSafe 1

Comments

Routine inspection conducted. Facility is in good sanitary condition

- Handwash sink equipped with splash guards, hot/cold running water, liquid soap, and paper towels
- Quaternary ammonium compound sanitizer (quats) dispensed at 200 ppm
- Sanitizing pail contains quats at 200 ppm. Utensils are immersed in the sanitizer, then rinsed off with tap water prior to usage. WARNING: The sanitizer must be rinsed off before using utensils.
- 3-compartment sink in back room have drain plugs for proper warewashing
- Mini-freezer out front and stand-up freezer at the back at -18C, thermometers for both freezers are present
- Recently washed utensils and tongs are in sanitary condition
- No signs of recent pest activity at time of inspection
- Sales associate on site has in-house 7-Eleven Food Safety Training*

*This is not a substitute for FoodSafe 1

Recommendations:
- The hot-dog machine heat dial does not state cooking / hot-holding temperatures. Therefore, it is important that you know what position on the dial corresponds to 74C, and what position corresponds to a proper hot-holding temperature of 60C. This is to ensure that you do not dial the machine "too-low" in the future.
