302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Quats sanitizer pail by the prep line had no detectable sanitizer.
Corrective Action(s): Quats sanitizer must be at 200ppm to properly sanitize food contact surfaces. Ensure sanitizer solution is changed on a regular basis. Sanitizer was emptied and prepared at 200ppm at the time of inspection.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Large can of pineapples was found to have multiple dents (one along the seam of the can).
2) Scoops were stored directly inside ingredients with the handles covered in food.
Corrective Action(s): 1) Ensure canned items are inspected upon receipt and items with dents are rejected. Dented cans may allow for the entry and growth of pathogens. Can of pineapples was removed at the time of inspection.
2) Ensure all scoops are stored in a sanitary manner to prevent handles from contaminating ingredients. Scoops were relocated at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Carpet was found in front of the pizza prep line.
Corrective Action(s): Remove carpet from the kitchen area. All surfaces must be smooth, non-absorbent, and easily cleanable. Carpet was removed at the time of inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Pizza prep cooler was at 5C. Thermostat is set at 1C and constantly fluctuate from 0.5 to greater than 4C even with the cooler doors closed.
Corrective Action(s): Service cooler unit and ensure it can maintain temperatures at or below 4C on a consistent basis.

Comments

-Facility has undergone some renovations in the front area and has reorganized and removed some equipment (2 chest freezers).
-Walk-in cooler was at 4C.
-Single door prep cooler was at 4C.
-Chest freezer was at -20C. Facility plans on replacing chest freezer with upright freezer unit.
-Cleaning and sanitizing carried out in 2-compartment sink. Sink plug available and cleaning and sanitizing carried out at the end of the day.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Deli slicer is no longer being used - meat is purchased presliced.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
-Facility is planning on adding a high temperature dishwasher. Operator has replaced existing hot water tank for 181L water tank. Contact the health department once the dishwasher has been installed to verify it can meet minimum sanitizing requirements.
-Facility is planning on selling pizza by the slice and will use time as a control measure. Records must record the time the pizza was placed into the hot holding unit and whether it was completely sold or if any product was discarded.
-FoodSafe Level 1 valid (temporary certificate June 4, 2019) until June 4, 2024.
