Observation (CORRECTED DURING INSPECTION): Observed tray of fries in chest freezer left to cool uncovered and near a large cardboard box inside the unit.
Corrective Action(s): Cover food items when placing them in freezers/coolers as debris/particles from the cardboard could contaminate the food.
Staff member covered fries during inspection.

Observation: Sandwich display cooler initially at 8-9 deg C. After probe thermometer was left inside for 15 minutes, sandwich cooler was still around 6.5 deg C
Corrective Action(s): Adjust or repair cooler such that it maintains internal temperature of 4 deg C or less consistently. Move all potentially hazardous foods inside to the other stainless steel cooler. Any potentially hazardous food items (salads, dairy, etc) can only be exposed to temperature greater than 4 deg C for a MAXIMUM of 2 hours.

Handsink equipped with liquid soap, hot and cold running water, and paper towels
Freezers were -18 degrees C (0 degrees F) or colder.
Thermometers available in all coolers --> Ensure to obtain new thermometer for the sandwich cooler
Temperature logs were up-to-date.
No hot holding at time of inspection
200 ppm QUATS surface sanitizer available in cloths at rag buckets (cloths have sanitizer in them when dry, and are activated when water is added)
3 compartment sink used for dishwashing, Ensure to fill 3rd compartment with mixture of 1/2 tsp bleach per 1 liter of water when washing dishes
General sanitation excellent. All floors, food contact surfaces, and equipment were clean and free of any food debris/dirt
No signs of pests
Dry Storage area is kept in excellent condition, all foods stored off the floor
Staff members on site have renewed their FoodSafe level 1 and will be sending copies of their certificates to district EHO.
