Observation: 1. Quats sanitizing spray bottle measured with a concentration of more than 400 ppm. 200 - 400 ppm is required to properly sanitize food contact surfaces.
2. Staff stated the manual dishwashing step for a mixer bowl was wash, rinse, sanitize then rinse again. This is not the proper way of manual dishwashing.
Corrective Action(s): 1. Dilute the aforementioned quats sanitizing spray bottle to 200 - 400 ppm. Ensure less stock solution is added when mixing for sanitizer solution.
2. Educated the staff on the proper sanitizing steps for manual dishwashing: wash, rinse, sanitize and air dry. Do not rinse food equipment and utensils after sanitizing.

Observation (CORRECTED DURING INSPECTION): 5 packages of raw chicken breasts were stored on top of fruits and ready to eat food. Meat juices not observed to be leaking on to other foods.
Corrective Action(s): Move the raw chicken breasts to the lowest shelf in the cooler. Raw meat must be stored below and away from ready to eat food.

Routine inspection:
- Stand up cooler maintained at 4C.
- Stand up freezer maintained at -18C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- High temperature dishwasher registered 76C at the plate level.
- Utensils maintained in sanitary condition.
- General sanitation satisfactory.
- No pest activities observed at the time.
