Observation (CORRECTED DURING INSPECTION): Employee when questioned was not following proper procedures for manual warewashing. Utensils must be allowed to air dry after soaking in the sanitizer solution of bleach. Employee stated they were rinsing off the utensils after removing them from the bleach solution.
Corrective Action(s): Ensure all staff are properly trained on how to properly ware wash. Ensure staff are trained on how to test the bleach solution using chlorine test strips to verify a minimum of 100ppm bleach is available.
