Observation (CORRECTED DURING INSPECTION): Over 10 large bus bins full of noodles and rice cooling at room temperature. All bins were heaping above the top of the bin. No temperatures written on the bin nor do staff check the internal temperature when food is cooling
Corrective Action(s): Correction order in place that states cooling must occur in shallow containers, with the time it is cooked written on the bins and food must not be at room temperature for more than 2 hours.
Food discarded that was not in compliance of correction order. Only one staff member on site aware how to properly cool foods. Cooling procedures reviewed with staff.

Observation (CORRECTED DURING INSPECTION): Lots of bins of food sitting out at room temperature including chicken that is being prepped (3 large boxes), 5 bins of vegetables, rice and noodles waiting for orders to come in, and large bins of raw chicken waiting to be cooked.
Corrective Action(s): -Food must be prepped in small batches, only have a small amount of chicken out waiting to be cooked. Only have a small about of meat out being cut up
-All food that is waiting for orders must be int he prep coolers, nothing is to be at room temperature

Observation: Lots of raw meat sitting on shelves above ready to eat food such as vegetables, noodles and rice
Lots of bins and containers in the walk in cooler either do not have a lid or do not have a properly fitting lid
Corrective Action(s): Raw meat must be on the bottom shelf and ready to eat product must be stored above
All containers must have properly fitting lids to prevent contamination, using a metal bowl in the center of a pile of rice is not a properly fitting lid

Observation (CORRECTED DURING INSPECTION): Food observed being thawed on the counter at room temperature
