Observation: Some droppings noted. Most traps empty. One located in hallway near gas cylinders has activity.
Corrective Action(s): Licenced pest control reports are available. Monitoring has been increased. Continue with licenced pest control and follow advice of licenced pest expert as noted on their report. Protect food and prevent pests from entering. Clean up food spills daily.

Observation: Floor under equipment, in dishwashing area under sinks, and between counters has an accumulation of dirt and grease. Some droppings noted.
Corrective Action(s): Deep clean kitchen and follow a written routine cleaning schedule.

Coolers are at 4C or colder with exception of 2 bar cooler and domestic cooler by back entrance - these are for low risk foods only.
Temperature records - keep daily and add dates to temperature charts (currently not dated).
No hot holding during inspection.
Mussels - keep tags for 90 days for traceability.
Reviewed egg safety and use of pasteurized egg.
Most lettuce is pre-washed - recommended due to lack of food prep sink.
Food Safe - kitchen manager on site has Food Safety training.
Food Safety Plan - is being updated. Reviewed draft with kitchen management.
Hand washing sinks in kitchen, bar, and staff washroom have hot/cold water, liquid soap, and paper towels in dispensers.
Kitchen hand sink is accessible for staff to use.
Quats sanitizer - bottle labelled during inspection. The Quats sanitizer level is at 200ppm - good.
Glassware washer has a final sanitizing rinse - water temperature reached 180F + on the final rinse water gauge and the temperature inside of the dishwasher reached 160F+ - good.
Kitchen dishwasher has a final sanitizing rinse - chlorine concentration after final rinse was 50-100ppm - good.
Sanitation plan is being updated. Provided posters. Include instructions for staff and a cleaning schedule. Check dishwasher, glassware washer daily.
Grease trap cleaned monthly.
Small room beside walk in cooler - items have been removed. Clean floor beside the upright cooler in this area.
Small room with ice machine - some items have been removed - good.
