Comments

Routine inspection conducted. Facility is well maintained and operated. Area is well-lit. The following observations were made:

Back processing area:

- Grinders not in use at time of inspection. Operator states that they are periodically vacuumed - different vacuum attachments are used for floor and the grinders and are kept separate - good. Vacuum attachment used for the grinders is in sanitary condition and stored in a bag, and is sanitized with chlorine-based sanitizer after each use
- Chlorine-based sanitizer present at 200 ppm chlorine residual
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in both restroom and designated hand wash area
- 3 compartment sink present for washing and sanitizing scoops
- Restroom present and in sanitary condition
- No visible signs of recent pest activity
- All food products are kept off the floor

Front storage / retail area:

- Gravity-fed bins and bulk storage bins are cleaned-in-place with sanitizer after they are empty
- All storage bins are well maintained and in sanitary condition

The following require your attention:

1. There is a small gap underneath the warehouse door. Install a proper tight-fitting seal to ensure that pests, such as rodents, do not enter the facility (NOTE: Seal has already been received and is pending installation)
2. Ensure that all scoops are kept out of food products to avoid potential contamination by food handlers' hands
3. Contact your professional pest control company. There are no adhesives inside any of the mechanical traps - ensure that they are routinely installed / reset for effective monitoring of pest activity
4. Obtain a drying rack for your scoops - your three compartment sink is for washing, rinsing, and sanitizing your scoops
