- Handsinks are stocked with liquid soap & paper towels
- 200ppm QUAT detected in sanitizer dispenser
- 100ppm chlorine residual detected after final rinse cycle of low temp dishwasher
- Temperatures of refrigeration units are adequate (<4C coolers, <-18C freezers)
- Coolers are equipped with working thermometers
- Temperature log is in active use
- Hot holding (gravy, soup) measured internal temperature >60C
- Utensils in dipper well are maintained in a sanitary manner
- Deep cleaning is done on a weekly basis (Sunday after rush); did observe some grease buildup under the stove. This area requires attention as it may attract pests. De-grease and deep clean hard-to-reach areas.
- Backdoor is properly sealed on the bottom & kept closed during operation
- Dry storage area is in sanitary condition
