Corrective Action(s): - Cover all food items with proper lids or plastic wraps.

Observation: A significant amount of fruit flies observed (ie on the floor, on buckets of dry food items) inside the dry storage room located in the main kitchen.
Corrective Action(s): Install sticky traps or other pest control measures. The main kitchen must be free of pests to prevent contaminating food.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Significant build up of grease, dirt, and food debris in the following areas:
- floors in the main kitchen
- floors inside the dry storage room (main kitchen)
- floors inside the dry storage room (main dining area)
- underneath the dishwasher
- in and around the prep coolers
- floors inside the walk in cooler
- behind the main grill stations
Corrective Action(s): Remove the build up of grease, dirt, and food debris. Clean the areas noted above.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: - The front display cooler is measured at 15C ambient temperature.
- The prep cooler near the entrance to the main kitchen was measured at 10C.
Corrective Action(s): - Fix or replace the coolers noted above. Call for service if needed. All coolers must maintain temperature < or = 4C at all times. Recommended the operator to replace solid glass shelves with wire racks to help circulate cool air inside the front display cooler. Do not store any cold potentially hazardous food items inside the coolers until coolers maintain < or = 4C.

Comments

- General sanitation needs improvement. Refer to specific areas noted in the violation section.
- All handwashing stations stocked with cold/hot running water, soap, and paper towels. You must provide paper towels inside the paper towel dispenser. Leaving a roll of paper towel is unacceptable. - All coolers (walk in, prep, display) < or = to 4C.
- All freezers (chest) < or = to -18C.
- You must continue to monitor all coolers and maintain an up to date temperature log. Temperature log was not maintained since September 19th, 2017.
- High temperature dishwasher (stationary) achieved 74.6C at the plate's level during the final rinse cycle.
- Two compartment sink available for manual dishwashing. Please follow the proper manual dishwashing procedures. Do not skip the sanitizing step.
- Surface sanitizer available in spray bottle at 200 ppm Quat solution. Ensure to provide surface sanitizer at each station (ie. main kitchen, serving area in the front) at all times to clean and sanitize food contact surfaces.
- Dry storage area needs better organization. You must discard any food packaging that are ripped and thus contaminated. Pest control measures are needed for fruit flies.
