Observation (CORRECTED DURING INSPECTION): 12 packages of eggs observed at ambient temperature. Internal temperature: 23 degrees C.
Corrective Action(s): Ensure all potentially hazardous foods are maintained at 4 degrees C or less in order to limit the growth of potential pathogens, such as salmonella. Note: Operator purchased new eggs at time of inspection which were placed into the cooler unit at 4 degrees C or less. Eggs not stored above any ready-to-eat foods.

Observation: What appeared to be pink biofilm was observed on interior components of ice machine.

Observation (CORRECTED DURING INSPECTION): 1. Shelving unit has been placed next to mop sink. Reusable container lids stored on shelving closest to mop sink.
2. Raw meat stored above ready-to-eat foods such as tomatoes, cilantro. Note: Meat in sealed packaging, no leakage observed.
3. Bags of rice stored directly on floor.
Corrective Action(s): 1. Install a suitable barrier along the side of shelving that is closest to the mop sink. Barrier must extend from bottom to top of shelving and protect food, utensils, equipment from potential contamination. Ensure barrier is constructed from a material that is smooth, non-absorbent, easy to clean, durable, and suitable for the intended purpose. Note: Container lids were placed into dishwashing area at time of inspection.
2. Raw meat placed at bottom of cooler. Ensure raw potentially hazardous foods are not stored above ready-to-eat foods.
3. Bags of rice removed from floor. Ensure all foods are stored off the floor to facilitate cleaning and to protect foods from potential contamination.

Upright cooler at 4 degrees C.
Preparation cooler at 4 degrees C (above and below).
Under counter cooler at 4 degrees C.
Upright freezer at -15 degrees C.
Under counter freezer at -23 degrees C.
Hot holding internal food temperature at 60 degrees C or more.
Hand washing sinks unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
High temperature dishwasher measured 77 degrees C at the utensil surface during the final rinse (minimum 71 degrees C at utensil surface)
Bleach water sanitizer available in bucket and labeled spray bottle at 200 ppm chlorine. Note: One other spray bottle located in the customer area was unlabeled and had a concentration that slightly exceeded 200 ppm chlorine. Sanitizer was diluted to 200 ppm chlorine and bottle was labeled at time of inspection (Refer to violation code 309).
No signs of pest activity observed at time of inspection
