Observation (CORRECTED DURING INSPECTION):
The bleach solution wiping cloths are being stored in had [Cl2] of 50ppm. The bleach solution is too low and bacteria will not be killed.
Corrective Action(s):
Immediately make a new solution of bleach and water, and the strength shall have [Cl2] of 100-200ppm. Change the solution every 3 hours. At the time of the inspection, the owner made a new bleach solution with [Cl2] of 200pmm.

Observation:
Found cracked and chipped, plastic food containers. Pieces of plastic could fall into food and/or bacteria will start growing in the cracks.
Corrective Action(s):
Immediately throw away all chipped, cracked and/or damaged food containers and lids. Purchase new food grade containers, and inspect all containers, utensils and equipment on a regular basis.

310 - Single use containers & utensils are used more than once [s. 20]
Observation:
Wax paper and food grade plastic bags (from Russel Foods) are being using more than once to cover food items. Wax paper and plastic bags shall only be used once or for one task, as they are not durable enough.
Corrective Action(s):
Throw away all used wax paper and plastic bags. Train staff to only use these materials once and then to throw them away.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -18C or colder; thermometers present in each cooler and freezer unit; and temperatures recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Hair nets, masks, and work coats being worn by all staff during production.
- General sanitation level is good.
- No signs of pests. Replace the door sweep on the base of the back door to exclude pests. The sweep has worn away in one spot and an opening can be seen.
- Bleach solution in spray bottles had [Cl2] of 200ppm.
- Grease interceptors cleaned every 3 months.
- A domestic stove/oven unit present in the staff room. No cooking of any food shall be done by staff for their own purposes as there is NO ventilation above the unit. Boiling of water is okay.
- 3x proofer machines present in production area, to proof the dough. These were not shown on the approved floor plan, nor were they present during the initial inspection. However, these machines can be used ONLY to proof dough.

**2x steamer units present in the production area to lightly steam/cook products prior to freezing and packaging. Also found a pancake frying machine present in the production area, which the owner indicated that he doesn't use. These pieces of equipment were not on the approved floor plans or during the initial inspection. These equipment shall NOT be used until written approval obtained from the City's Building and Fire Dept. as adequate ventilation may be required. Please provide this approval to our office for our records. **
