- Premises maintained in a sanitary condition. - Handwashing sinks supplied with liquid soap and paper towel - Coolers operating at 4C or colder - Freezers maintaining product in a frozen state. - Food stored in a manner to prevent contamination (ie. wrapped/covered) - Hot held foods (soups) maintained at >60C - Temperature monitoring in place 2 times/day. - High temperature dishwasher operational and rinse temperature adequate to sanitize dishes. Temperature at dish surface measured 72.6C. - Glasswasher in bar operational. 12.5ppm Iodine detected in rinse cycle - Quats sanitizer solution present in buckets at stations throughout kitchen/bar. Concentration measured 200ppm. - No signs of pest activity noted. Pest control contract in place.
