Observation (CORRECTED DURING INSPECTION): Internal temperature of soups that were left in walk-in cooler to cool down were measured at 32C and 35C. Soups were prepared about an hour ago. Ice wand is in use.
Corrective Action(s): Move the soup bucket out of the cooler, portion it out into small containers to help in cooling.
- Ensure that the hot foods are cooled from 60C to 20C within 2 hours (outside the cooler) and from 20C to 4C within 4 hours inside the cooler. Use of ice wands (observed at the time of inspection) and ice bath is recommended.

Observation (CORRECTED DURING INSPECTION): Upright cooler (glass door) in the far end of kitchen has no thermometer.
Corrective Action(s): New thermometer was available and was placed in the cooler. Ensure that all coolers, freezers and hot holding units have accurate thermometers

- All handsinks in kitchen, prep area, bar area and washrooms are supplied with hot and cold running water, soap and paper towel
- All coolers - walk-in cooler (upstairs and basement), walk-in bar cooler, upright glass cooler, prep coolers, pizza prep cooler, line (drawer) coolers, desert cooler - all are maintained at temperature less than 4C
- Walk-in freezer, line freezer are measured at less than -18C
- Hot holding unit is maintained at greater than 60C
- Low temperature dishwasher at 49C and chlorine residual of 50 ppm in rinse water
- Bar glass washer at 12.5 ppm iodine
- Quats sanitizer available in labelled spray bottles (kitchen, bar) and from dispenser at 200 ppm
- Ice machines (2) in sanitary condition
- General sanitation satisfactory
- No evidence of pest activity at time of inspection
- Food storage practices are satisfactory
- Foodsafe certified staff is available on site at the time of inspection
