Observation (CORRECTED DURING INSPECTION): Items thawing in the prep sink as well as on the rolling rack at the back (both at room temperature). Staff turned on water in the prep sink once inspector arrived.
Corrective Action(s): This has been previously discussed with staff. Thawing must be done under cold running water or in the cooler.
