Temperature records are getting well maintained. Please see note regarding accurate readings of the sweets cooler.
Cooling and use of gravies occurs in regular cycles: cooked, dispensed into large Bunge sized containers, moved into walk in freezer for rapid cooling, then moved to walk in cooler and small standing cooler for use.
