- General sanitation is good.
- All handwashing stations are supplied with hot/cold running water, soap, paper towels.
- 3-compartment sink available for manual warewashing. Sanitizer available at 200ppm QUAT concentration.
- Surface sanitizer available in spray bottles at 200ppm QUAT concentration.
- No signs of pest activity.

Temperature control:
- All coolers at < or = 4C
- All freezers at < or = -18C
- Thermometers available in all refrigeration units.
- Ensure to keep temperature log up to date.

Note: The processing room was measured at 15C. The walk in cooler (back) was measured at 10C. The supervisor stated that the processing room/walk in cooler were going through defrost cycles. Ensure to monitor the temperature in both areas and ensure the defrost cycle does not take more than 2hrs.
