Code 302 noted on Routine inspection # ZDER-C66U7Y of Aug-18-2021 Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: High temperature mechanical dishwasher noted at 67 C max. Dishware already run through unit. Correction: Ensure all dishware and food contact equipment run through the dishwasher is run through the dishwasher again once it is functioning properly and sanitizing at 71 C or higher at its final rinse cycle. Follow-up to report #ZDER-C66U7Y -High temp mechanical dishwasher repaired and appears to be functioning properly 1. No leaking or spraying out the sides 2. Temperature reaches over 82 C at the final rinse step at the gauge and over 71 C at the dish -Handsinks re-supplied with 'hot & cold water, liquid soap and paper towel -Significant improvement in cleaning noted - additional cleaning expected next week with additional staff starting training and cleaning in prep for opening Sept 7, 2021 to the public ***Premises is approved to OPEN to the public *Required corrections still outstanding noted on previous report.
