Comments

- 'Kimbab' and 'Soondae' were collected for routine food sampling.
- Foods are no longer stored at room temperature. Only display items.
- Foods stored at large hot holding unit (3 tiered) were probed and measured >60C
- Foods stored at small hot holding unit (1 tier) were probed and measured 50C. Foods that have been recently cooked (within 2 hours) were moved to the large hot holding unit.
* Ensure that the small hot holding unit is able to maintain foods at or above 60C at all times.
* Staff shall probe foods at hot holding unit and record on temperature log twice daily (once in the morning, once in the afternoon) and ensure that foods kept below 60C for longer than 2hours must be discarded.
- Temperatures of refrigeration units meet regulatory requirements (<4C coolers, <-18C freezers)
* Staff shall record temperatures of all coolers at least once daily
- 200ppm chlorine sanitizer is available in labelled spray bottle
- High temp dishwasher achieved adequate sanitizing temperature (>71C)
- Foods are stored off of floor and prevents cross-contamination
- Handsinks are supplied with hot & cold running water, liquid soap and paper towels
