Observation (CORRECTED DURING INSPECTION): Two bleach sanitizer spray bottles measured
0 ppm chlorine

Replenish the sanitizer bottle with bleach solution
measuring 100-200 ppm chlorine. Ensure to
have test strips to test the sanitizer strength.

Rationale: Inadequate concentration of sanitizer can not
effectively reduce infectious level of pathogens

Observation: Bags of frozen fruits were completely thawed and
buckets of ice cream were still intact inside the
coldtech freezer. The operator stated the freezer door
was left open overnight. Freezer measured 0 degrees C during
inspection.

Transfer the bags of thawed fruits into a cooler
achieving 4 degrees C or below and ensure to use up all the
thawed fruits by today. Any leftovers are to be
discarded.
Transfer ice cream buckets into the upright freezer.

- upright freezer = - 17 degrees C (all foods are frozen)
- Hot-holding unit (tomatosoup) internal tem = 74.8 degrees C
- High temp dishwasher was ran 4 cycles and achieved
74.8 degrees C during the final cycle on plate surface.
(1st = 61.3 degrees C, 2n = 69.6 degrees C; 3rd= 70.9 degrees C, 4th = 74.8 degrees C)

General:
- operator's FoodSafe certificate verified
- All handwashing stations stocked with liquid hand
soap, paper towels, and hot/cold running water.
- 2- compartment sink with 2 functional sink plugs
available for use
- Bleach sanitizer in a container measured 200 ppm
with cleaning rags stored inside
- No signs of pests
- Temperature logs well- maintained
- Ice machine and a scoop kept in sanitary manner
- Overall food storage practice is satisfactory. Food
protected from contamination.

at the time of inspection. Operator reported they are
waiting for the frame to arrive. Ensure it's posted.
