Gasket in left side 2 door cooler has been replaced - good. Temperature of cooler was at 4 C or below.
Prep cooler with inserts - bottom only used to store non potentially hazardous foods as the temperature does not stay at 4 C or below.
Operator purchased new prep cooler with inserts - top was 3 C and bottom was at 5 C - can use this to replace other cooler once bottom is at 4 C or below.
High temperature dishwasher registered at >71 C on plate surface during final rinse. Operator has been using thermo-labels to confirm temperature - good.
Thermometers have been purchased.
Follow food safety plan when cooking foods.

Continue cleaning the facility - all surfaces should be clean and free of dust/debris.
