-Coffee roasting for retail/wholesale and at local Farmer's Markets -Cold Brew processed for these locations
-General sanitation excellent -no signs of pests, Orkin Pest Control comes in monthly -devices throughout premise -no rodent activity as per last report reviewed -ensure the bay doors are closed tight unless actively shipping
-Food flow from raw to final product
-**keep any open bulk food bags in rodent proof containers as an added pest deterrent
-Handwash sinks hot/cold water adequately stocked clear for use
-Combo domestic fridge/freezer: 1 deg C/-20 deg C, thermometer at food level available for monitoring
-Food shelves stain sealed in good condition -lowest levels >15cm off the floor
-Manual Wash Method reviewed as per signs posted, plugs available at 3-compartment sink, test strips available for monitoring sanitizer solutions
-Bleach sanitizer spray for food contact surfaces measured at 200ppm -ensure minimum is >100ppm
-**NOTE the large bins for finished roasted beans are Clean In Place as they cannot be submersed in the sinks -the sanitizer spray at minimum must be 200ppm bleach residual
