Observation (CORRECTED DURING INSPECTION): A sanitizing step is not being carried out during dishwashing. Remember the following dishwashing steps:
1) Wash with soapy water
2) Rinse with clear water
3) Sanitize - if bleach is used then 1 tbsp bleach per gallon of water
4) Air dry

Comments

Post clear dish washing procedures, and train all staff in proper dish washing. This infraction is noted almost every summer.
Proper dishwashing was discussed.
- Premise is quite clean in most areas.
Bleach spray is 200 ppm chlorine - good.
Fridges are all < 4 Degrees Celsius - One fridge is broken but not being used. OK.
No sign of pests - good.
Dipper well is in use - good .
Hand sinks are stocked and working .
