Observation (CORRECTED DURING INSPECTION): The prep cooler air temperature is at 16C. Food temperature is at about 15C as well. Salad self serve - food temperature are at more than 4C (measured 10C).
Discard all food that is higher risk (potentially hazardous foods such as dairy, chicken, cooked rice, tofu, cooled bubble tea) that has been at more than 4C for more than 2 hours.

Notes
1. Handsink has liquid soap and paper towels.
Hand sanitizer also available (Covid-19 Safety)
2. Wiping cloths store in a 100-200 ppm solution (chlorine).
3. Dishwasher has a final hot water sanitizing rinse (71C measured inside when 85C measure on final rinse gadge).
4. Coolers: underneath salad display is a 4C or colder. Use ice for items displayed.
5. Hot holding - soup 60C
6. Covid - 19 Safety Plan reviewed.
7. Food Safety Plan - reviewed with operator. Add the ice requirement and small volumes of food only to be displayed. Display items are pre packaged.
