Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Fridge number 5 not properly cold holding at 5 to 8c as compressor fins observed with ice build up.
Correction: Staff stated cooler was loaded this morning. All perishables were relocated to adjacent upright glass cooler.
Contact technician and do not use until technicain veriifies it is capable of cold holding at <4c.

Grease diffusers in exhaust canopy cleaned
Cardboard removed from under the cooking canopy
**Ensure wiping rags when not is use are kept fully submerged in sanitizer and the sanitizer is changed every 2 hours. Currently the premises is using chlorine. Recommend using quat sanitizer as this does not impart any odor on cutting board surfaces.
