Observation (CORRECTED DURING INSPECTION): Various types of dim sum stacked in two door cooler by the steamer, measuring 20-25C.
Corrective Action(s): Foods must be cooled from 60-20C in 2 hours or less, and from 20-4C in 4 hours or less.

Observation (CORRECTED DURING INSPECTION):
Time stamping that was discussed with operator has not been completed (logs end on the 20th of an unnamed month). Various foods left out at room temperature:
- cut vegetables (green onion, onion, carrot, etc)
- noodles
Corrective Action(s):
CORRECTION ORDER ISSUED - temperature logs must be maintained. Foods at room temperature must be discarded after two hours. This is your final warning - if this is not maintained, all potentially hazardous foods must be kept in the cooler at 4C at all times.

Observation (CORRECTED DURING INSPECTION):
1) Wiping cloths not stored in bleach sanitizer when not in use.
2) Rice scoops stored in room temperature water - staff rushed to fill containers with ice at beginning of inspection.
Corrective Action(s):
1) Wiping cloths must be stored in sanitizer when not in use.
2) Rice scoops to be kept in ice water at all times, and put through the dishwasher every four hours.

Corrective Action(s): Load the paper towel dispenser to avoid contaminating the roll, and for easy access.
