205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Proteinaceous foods such as beef and chicken were stored in the walk-in cooler and were internally at 8C at time of inspection. The products were placed after lunch rush approximately 2 hours ago.
Corrective Action(s): Beef and chicken / rice products stored in walk-in cooler were transferred to the store cooler.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Low-temperature dishwasher contains approximately 0 ppm chlorine residual. Chlorine bottle feeding the sanitizer line is empty.
Corrective Action(s): The chlorine bottle was replaced with a new one, and the sanitizer was primed. Chlorine residual was tested at 50 ppm in final rinse cycle at the plate. All previously washed dishes with the dishwasher were re-washed.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Vats of chicken and meats inside walk-in cooler were not covered.
Corrective Action(s): The chicken and meats were covered with a lid. Ensure that all foods are covered when not in use to protect them from contaminants such as dust and pests.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. The crevice between the two deep fryers is saturated with oil and grease.
2. Floor under the cook line, particularly under the deep fryers, contains spilled oils and grime.
3. Area behind low-temperature dishwasher contains food debris / grime. An ant colony situated behind the dishwasher was actively feeding on the food grime at time of inspection.
4. Ventilation slats above the deep fryer is saturated with oil.
Corrective Action(s): 1. Thoroughly clean and degrease the area between and under the deep frying areas and behind the dishwasher. Correct by April 2, 2018. .
2. Please remove the ventilation slats, clean, and run through dishwasher. Correct by April 2, 2018.
3. The ants feeding on the food behind the dishwasher was removed at time of inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Walk-in cooler at 8C at start of inspection, and did not decrease in tempearture after 1.5 hours.
Corrective Action(s): Proteinaceous items in cooler (e.g. meats, chicken) and potentially hazardous foods were transferred from the walk-in cooler to the store cooler, which is maintained below 4C. Please service walk-in cooler to ensure that it maintains a temperature of 4C or below.

Comments

Routine inspection conducted. The following was noted:

1) Temperatures (Max: 4C for coolers; Min: 60C for hot-holders)
- Prep cooler at 4C (Reminder: Keep the lid closed when not in use)
- No freezers are used on-site
- Rice hot-held at 60C or above

2) Hygiene and Sanitizing practices
- Employees wearing hairnets - good
- Sanitizing pail contains 100 ppm chlorine residual
- Handwash sink adequately stocked with hot/cold running water, liquid soap, and paper towels
- No evidence of gloves being re-used at time of inspection. Reminder: Gloves are not a substitute for handwashing.

3) Storage
- No opened cans are re-used - good
- Foods are elevated off of the floor
- Storage inside walk-in cooler is now compartmentalized - Raw foods, produce, and cooked foods are stored on separate shelves. Good.

4) Administrative:
- Employees have FoodSafe 1 (Note: Certificates issued before July 29, 2013 will expire on July 29, 2018. Ensure that they are renewed before July 29, 2018. Please go to www.foodsafe.ca for further details)
- Permit posted and up-to-date
- Food premise hires pest control company to conduct inspections on Thursdays

*Reminder Please ensure that door is closed at all times to prevent entry of pests and ants. A follow-up inspection will be conducted to ensure that the deficiencies noted above have been addressed.
