Observation (CORRECTED DURING INSPECTION): Wiping cloths for diining tables not stored in bleach sanitizer.
Corrective Action(s): Wiping cloths must be stored in bleach sanitizer when not in use to prevent bacteria from growing on the cloths. Instructed operator to prepare a bleach sanitizer. Bleach sanitizer was 200ppm.

Observation (CORRECTED DURING INSPECTION): Two fry pans were found in the kitchen hand sink.
Corrective Action(s): Hand sinks must not be blocked/obstructed as they need to be accessible to food handlers for hand washing. Instructed operator to move the fry pans.

Observation (CORRECTED DURING INSPECTION): Foods in coolers are not covered.
Corrective Action(s): Foods stored in coolers must be covered to prevent contamination. Instructed operator to place covers over foods.

Observation (CORRECTED DURING INSPECTION): Frozen meats thawing on shelf above wok station.
Corrective Action(s): Frozen foods must not be thawed at room temperature. Thaw foods in a refrigerator or in the microwave. Instructed operator to place the thawing foods (which were still 4 degrees Celsius or less) into a cooler.

304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings fround on the floor along the walls by the back door and under the sink in the servery.
Corrective Action(s): Clean up all mouse droppings and sanitize the affected areas. Premise is serviced by a professional pest control company and live traps are in use. Droppings may be old. Informed operator to monitor for rodent activity and clean up droppings as soon as possible.

Observation (CORRECTED DURING INSPECTION): Back door was open and screen door was not in use at time of inspection.
Corrective Action(s): Back door must be kept closed when not in use. If back door is to be kept open for fresh air, the screen door must be used to prevent pest entry. Instructed staff to close the back door at the time of inspection.

Coolers and freezers equipped with thermometers.
Organization of storage areas is satisfactory.
Hand sinks stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
Bleach sanitizer for wiping cloths in the kitchen was 200ppm.
Low temperature dishwasher residual chlorine sanitizer concentration of 100ppm after the final rinse cycle.
Chemicals are stored in a safe manner.
