Observation (CORRECTED DURING INSPECTION): - Back door was held open at the time of inspection.
- Owner closed the door and no concern of pest entry from the back door.

Comments

- Overall sanitation was satisfactory.
- 2 chest freezers at the front measured -21.3C and -20.5C
- Display cooler at 2.2C
- Hand wash sink was equipped with hand soap, cold/hot running water and paper towel.
- 2-compartment sink was available for washing and sanitizing cutting board and knives.
- 100ppm bleach available for sanitizing surfaces and cutting equippment.
- Randonly checked receipt for Veal meat in the freezer. It was from approved source.
- No meat build up on the top compartment of the meat cutter. Owner indicated that he cleaned and sanitized it daily - Excellent!
- Staff washroom was provided hand soap, hot/cold running water and paper towel.
- Owner hires pest control company Apna.

Recommendation: (1) Replace cutting board when there are deep gashes on it as it is hard to clean and sanitize.
(2) Keep up with the good sanitation to prevent flies infestation.
