Observation (CORRECTED DURING INSPECTION): Sauces labelled "Keep refrigerated after opening" including Honey Garlic, Texas BBQ, and Sweet Chili, were found in small squeeze bottles by the pizza prep area. Supervisor states that they were taken out this morning.
Corrective Action(s): Sauces were placed back into the refrigerator at time of inspection. Keep sauces refrigerated when not in use. They are stored at room temperature prior to opening, but must be refrigerated after opening.

Comments

Routine inspection conducted of Pizza Pizza. Facility is well maintained and sanitary standards meet health requirements. The following observations were noted during the inspection:

1. Temperatures
- Pizza at the front-of-house measures 60C. Operator has implemented time-tracking protocols, but no records were available to the inspector for review. If pizza is below 60C and time tracking is used, adequate records must be kept on an hourly basis
- Walk-in cooler at 3C
- Two-door prep cooler at 3C
- Three-door prep cooler (top and bottom) maintains at 3C
- 'Stand-up "Coca-Cola" cooler at back-of-house at 4C
- Walk-in freezer at -18C
- Temperature logs were NOT maintained since January 26, 2020. Maintain temperature logs on a daily basis to ensure that equipment is working

2. Hygiene and Sanitizing
- Hand wash stations in facility are stocked with hot/cold running water, liquid soap, and single-use paper towels (hand-dryer in restroom)
- Spray sanitizer measures 200 ppm quaternary ammonium compound (QUATS)
- Supervisor prepared sanitizing pail at time of inspection. Sanitizing pail measures 200 ppm QUATS
- Test strips available - but evident that they have not been used for a period of time due to significant discolouration in the test strip. *Check your sanitizer dispenser on a daily basis to ensure that it is functional*
- 3-compartment sink well maintained, sanitizing compartment has a drain plug, and drain rack is maintained in good sanitary condition. All shelving units, walls, flooring, and suspended ceiling are well maintained

3. Storage
- No raw products observed on-site
- Products stored at a minimum of 6" off the floor
- Chemical storage is isolated from food preparation areas. Chemicals stored underneath 3-compartment sink and floor cleaner is dispensed via the mop sink dispenser

4. Administrative
- Employee on-site has FoodSafe 1 (expiry: February 2024)

5. Pest Activity
- No signs of recent, visible pest activity was noted at time of inspection
- Professional pest control company is contracted to conduct routine audits
