Observation (CORRECTED DURING INSPECTION): - Sanitizer bucket in the kitchen prep is measured at 50ppm quats solution
- Several cleaning cloth in the kitchen were setting on the counters in kitchen area
Corrective Action(s): - Change the solution in sanitizing bucket and ensure that the solution is maintained at atleast 200ppm quats concentration
- Store all cleaning cloths in buckets with sanitizing solution at 200ppm quats solution

Observation: - Bowls were being used for scooping food from bulk bins and from inserts from prep cooler
- Several containers of food items are left on the floor in walk-in cooler and freezer
Corrective Action(s): Donot use bowls and use scoops with handle to scoop food items.
- Store all food items off the floor to prevent cross contamination of food and food contact surfaces

Observation: Fruit flies are observed in the front area with dirty dishes and glasses are stored
Corrective Action(s): - Clean and maintain sanitary conditions in the area. Flush any drains that could be acting as breeding grounds for fruit flies

Observation: - Several empty cardboard boxes stored in back storage area.
- Cottonwood accumulated in back area and it can easily get airborne and contaminate food items
- Front area where dirty dishes are stored is not maintained in clean and sanitary condition
Corrective Action(s): - Remove all empty cardboard boxes and ensure that it is maintained in clean and sanitary condition
- Remove all cotton wood and maintain sanitary conditions
- Clean and maintain sanitary conditions in the front area with dirty dishes

- Coolers - walk-in cooler, upright desert cooler, two prep coolers, line coolers and milk cooler are measured at less than 4C
- Walkin freezer and ice cream freezer are measured at -18C or less.
- Hot holding units are measured at greater than 60C
- Food contact surface sanitizerin buckets at front area is measured at 200ppm quats concentration
- Dishwasher is dispensing 50ppm chlorine residual solution during final rinse cycle
