Routine inspection conducted. Premise is well maintained, well-lit, and in excellent sanitary condition. The following was noted at time of inspection:

1. Temperatures
- Walk-in cooler at 2C
- Front-of-house topping prep cooler at 3C
- Yogourt dispenser at 3C
- Single-door undercounter cooler and double-door undercounter cooler maintained at less than 4C (top and bottom)
- Reach-in cooler in customer area at 4C
- Hot-holding units were measured at 60C or greater internally
- Temperature logs were maintained and up-to-date
- Sauces labelled 'refrigerate after opening' are placed inside coolers and maintained at 4C or less
- Cooler units had accurate thermometers inside

2. Hygiene and Sanitizing
- Hand wash stations adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizing pail measures at approximately 200 ppm quaternary ammonium compound (QUATS). Test strips available for use
- Knives and kitchen equipment maintained in good sanitary condition
- 3-compartment sink equipped with drain plugs. Drain rack above maintained in good sanitary condition
- Prep sink well maintained

3. Storage
- All food products elevated at least 6" off the floor. New stainless-steel shelving in back-of-house installed to elevate items on bottom shelf 6" off the floor
- Food products adequately covered when not in use
- Chemical storage adequately stored away from food products
- Overhead racks in food preparation areas are organized. Loosely stacked take-out containers in racks are for decoration only - take-out containers for customer use are protected from contamination in original packaging
- Potentially hazardous foods stored inside coolers are labelled after opening with 'date opened' and 'use-by date'

4. Pests
- No evidence of recent, visible pest activity noted at time of inspection

5. Administrative
- Permit posted and up-to-date
- Employee on duty has current and valid FoodSafe 1 (Expiry: April 13, 2024)
