Observation (CORRECTED DURING INSPECTION): Several cleaning cloths were left on the cutting table
Corrective Action(s): - Store all your cleaning cloths in the sanitizer solution maintianed at 100ppm chlorine residual. If the cloth is going for washing, it must be discarded in the bucket for dirty cloths immediately

Observation (CORRECTED DURING INSPECTION): - No soap and paper towel is available at handsink in washroom
- Cloth towel is hanging near the handsink in kitchen
Corrective Action(s): - Immediatley replace paper towel and ensure that it is available at all times
- Remove cloth towel and never use cloth towel to dry hands as it is perfect medium for bacteria to grow.

Comments

- Handwashing stations in kitchen are stocked with hot/cold running water, soap, and paper towels.
- All coolers (display, walk in, upright) at < or = to 4C.
- Upright freezer at < or = to -18C.
- All refrigeration units equipped with working thermometers.
- Hot holding unit not in use at the time of inspection.
- Daily temperature logs were not available on site. Please provide a copy of the daily temperature logs to the health inspector via email.
- Three compartment sink available for manual dishwashing.
- Surface sanitizer available in spray bottles at greater than 200ppm chlorine solution. NOTE: Prepare sanitizer solution by mixing one teaspoon in one litre or one table spoon in one gallon of wtaer (100ppm)

- No signs of pest activity at the time of the inspection.
- Nitrile gloves (latex free) being used.
