A routine inspection was completed:
- Coolers 4C or colder and thermometers present.
- Glasswasher had [I2] of 12.5ppm.
- Quats sanitizer in spray bottles had strength of 200ppm.
- Hand sinks had running hot and cold running water, liquid soap, and paper towels.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups; and foods stored 6" off the floor on racks and shelves.
- General sanitation level is good.
- Monthly service contract with a professional company to monitor and eliminate pests.
- Valid FoodSafe certified staff present.
- All surfaces are smooth, level, durable, sealed, and cleanable.
ACTION
Clean ceiling , walls, fan covers in the walk-in-cooler as there is dust & mold on them. Routine cleaning schedule of these areas shall be developed to prevent the accumulation of dust and mold.
Clean up the rodent droppings found around the milling machine; chemical storage area; and along the base of some of the walls. Wash and sanitize all surfaces that came into contact with the droppings. Inform your pest company of the areas of activity, so they can concentrate their efforts.
Keep all doors closed between dusk and dawn. Rodents are active during this time and will easily enter the premises through open doors.
Install a physical barrier between the milling machine area and the chemical storage area, to prevent contamination. |
