Observation (CORRECTED DURING INSPECTION): Brown sugar bags chewed open, rodent feces observed next to bags. Bags were stored in dry storage at back of facility on shelf.
Corrective Action(s): Discard chewed bags of sugar, operator discarded bags during inspection.

Observation: Bags of brown sugar observed chewed, rodent feces observed throughout back storage area. No rodent feces observed in kitchen area and food prep areas.
Corrective Action(s): Have pest control company visit and address any rodents, monitor and trap as needed.
Clean up existing rodent feces in dry storage area, under shelves, along walls etc.
Ensure all food is stored in sealed containers, discard any food that has had rodent activity (chewing/feces etc)

Daylight observed at back loading area around the bay door near dry storage
Back outside door of kitchen open, no screen
Back outside door in dry storage left ajar
These are all possible entry points for rodents

General cleaning required on the floor and under shelves in dry storage
Food not stored in sealed containers
Food/debris can attract rodents
Corrective Action(s): Seal all possible entry points to reduce likelihood of rodents entering the building
Install screens on all outside doors if left open for ventilation

Clean up debris and store food in sealed containers to remove food sources for rodents

Cooked pealed potatoes observed cooling at room temperature, ensure quick cooler form 60C to 20C within 2 hours and 20C to 4C within 4 hours. Do not leave at room temperature over 2 hours

Brown sugar bags discarded by operator, check all other food for any signs of pest activity and discard if affected.
