Observation (CORRECTED DURING INSPECTION): Sanitizer solution in spray bottle measured 0ppm chlorine residual at time of inspection. Staff do not appear to be using the spray bottle when cleaning/sanitizing work surfaces (ie. wet cloths without chlorine residual are present on various work tables in the kitchen for access and use)
Corrective Action(s): Wiping cloths used to clean/sanitize food contact surfaces must contain at least 100ppm chlorine residual to destroy germs during use. Ensure all wiping cloths are either:
a) Stored in buckets of 100+ppm chlorine sanitizer solution, or;
b) Used with spray bottles of 100+ppm chlorine sanitizer.
