-Operator is checking the domestic washer ensuring the sanitizing light is illuminated during the cycle
-disposable dishes/glassware/utensils only

-Lysol wipes used for food contact surfaces (QUAT >200ppm)
-Bleach available for manual washing in case washer is down

Daily tracking sheets maintained for fridges

-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath
